Salsa Turkey Cornbread Casserole and More!

I bet that title caught your eye? It caught my eye on Cinco De Mayo last week! I've made the Salsa Turkey Cornbread Casserole recipe a handful of times before and it's delicious! But this is the first try on Sweet Corn Cake and the Ultimate Frozen Strawberry Margaritas.  Here are these fabulous recipes!

First I started with the Sweet Corn Cake because it takes much longer to bake.  I didn't get photos of it but here's the recipe. Think Chevy's corn they serve with their meals! Yum my mom and I always order extra.  Now I can make it at home!

Sweet Corn Cake
1/2 cup butter, softened
1/3 cup masa harina
1/4 cup water
1/2 cups frozen whole-kernel corn, thawed
1/4 cup cornmeal
1/3 cup white sugar
2 tablespoons heavy whipping cream
1/4 teaspoon salt
1/2 teaspoon baking powder

Directions:
1. In a medium bowl beat butter until it is creamy. Add the Mexican corn flour and water and beat until well mixed.
2. Using a food processor, process thawed corn, but leave chunky. Stir into the butter mixture.
3. In a separate bowl, mix cornmeal, sugar, cream, salt, and baking powder. Add to corn flour mixture and stir to combine.
4. Pour batter into an ungreased 8x8 inch baking pan. Bake in a preheated 350 degree oven for 50 to 60 minutes. Allow to cool for 10 minutes. Use an ice cream scoop for easy removal from pan.

*All Recipes said to put the 8x8 pan into another pan filled with water but by the time 50 mins was up the cake was still gooey, so I took it out of the pan with water and took the foil off then cooked it for another 20 mins until it was no longer super gooey aka moist.*

Salsa Turkey Cornbread Casserole

Casserole Ingredients:

1 tablespoon olive or vegetable oil
1 1/4lb ground turkey
1 cup Salsa
2 tablespoons Gold Medal® all-purpose flour
2 cans (14.75 oz each) Cream style sweet corn, undrained
2 cans (15 oz each) Black beans, drained, rinsed
1 tablespoon chili powder
2 teaspoons ground cumin
1/2 teaspoon salt
1/8 teaspoon pepper

Topping  Ingredients:

1 pouch (6.5 oz) Betty Crocker Cornbread Muffin mix
1/3 cup milk
2 tablespoons butter or margarine, melted
1 egg

Directions:

1. Heat oven to 450°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
2. In pan heat oil over medium-high heat. Cook turkey in oil 4 to 6 minutes, stirring frequently, until no longer pink.

*That's still pink so continue until cooked through*
3. Stir in salsa and flour. Cook 2 to 3 minutes, stirring constantly, until slightly thickened.

4. Stir in remaining casserole ingredients. Heat to boiling.

5. Spread turkey mixture in baking dish.

After putting casserole ingredients in greased baking dish.

6. Meanwhile in medium bowl, stir all topping ingredients just until moistened (batter will be lumpy).

I used my Kitchen Aid mixer because I'm lazy and I did upper body that day.

7. Pour topping over turkey mixture; gently spread to sides of baking dish.

Here's what it looks like after you spread it over the top completely. It's hard to not catch some of the ingredients while trying to spread the cornbread on top so don't fret if you catch some casserole ingredients within the topping. 

8. Bake 12 to 15 minutes or until topping is golden brown.

See my Sweet Corn Cake had already been in the oven for 50 minutes and it wasn't done, so I just cooked it an additional 15 with the cornbread casserole so that it was done.

Serve along side with these bad boy margaritas and you got yourself a screaming meal!

Ultimate Frozen Strawberry Margaritas
Serves 4
6 fluid ounces tequila
2 fluid ounces triple sec
8 ounces frozen sliced strawberries in syrup
4 fluid ounces frozen limeade concentrate

All my ingredients to make an AMAZING margarita!
Directions:
Fill the blender to the top with ice and crush. Pour in the tequila and triple sec. Add the strawberries and limeade. Blend for 30 seconds or until smooth.

I'd say that's smooth!
Serve in margarita glasses with the rims dipped in sugar. (I opted out of Sugar Rims)

Enjoy!! Ugh I totally want one of those Margaritas! 
They seriously were the most amazing thing ever.. 
We had his brother over for dinner and on his first bite of the casserole I got a "Oh Wow!" out of him.  Needless to say I'm a happy camper! 
 It's always a task to make sure the future in laws know I can feed their son well.

My mom used to make that cornbread dish all the time when I was growing up, but we called it Taco Caserole. I LOVE It, it's delicious.
