Whoops - Whatcha Making (Thursdays!)

I was in a hurry yesterday and didn't get to post my weekly recipe because I didn't have photos to accompany it.  So a day later but none the less still delicious! Here's a recipe for Steamed Garlic Clams and Chardonnay Pasta!

This is a recipe I came up with on my own with some guidance from the good old web and a friend.


Chardonnay Pasta
X amount of desired pasta I used vermicelli pasta noodles
4 or 5 Garlic Cloves minced
1/2 cup Chardonnay (I actually don't measure but if I was guessing it was about 1/2 cup just eyeball it)
Frozen Peas & Carrots (Amount of veggies added is your choice)
EVOO enough to coat pan
Red Pepper Flakes to Taste
Salt & Pepper to Taste

-Boil your water and cook pasta as directions on box, I add in my frozen veggies to the pot while boiling pasta.

-Drain your pasta and set aside. 
-In same pot or a new pan coat with EVOO and then add garlic and sautee until desired either alittle for extra garlic flavor or a long time for no garlic flavor.
-Then add back in your pasta and toss with everything else. 
-Add your Chardonnay and eye ball the amount, alot will evaporate but you can tell if you have too much you don't want it to be watery. 
-Add red pepper flakes (I use ALOT I like this spicy) then salt and pepper to taste. 
-Put in serving dish and enjoy!

Steamed Garlic Clams
1 or 2 lbs of small fresh clams (not sure on how much he bought I'm just the chef!)
1 - Red Bell Pepper, diced
1 - Green Bell Pepper, diced (I used yellow because the store didn't have anything else)
3 - 8oz bottles of Clam Juice
1 Cup of White Wine
7 or 8 Garlic Cloves, minced
2 bunches of Green Onions diced

After chopping all your ingredients, in a pan with about 1-2 tbsp of oil saute your 2 bell peppers diced until soft.

Meanwhile rinse your clams off in cold water.

Add in clam juice and wine.

Bring to a rolling boil then add in your clams.  Add in your garlic now then cook for 10 mins or until all clams have opened, toss any that haven't opened.  (All of mine popped right open)
Top with green onions then transfer into a big serving bowl and enjoy!

Yummy! We had the leftovers yesterday a day later with extra clams added in and OMG the flavor a day later was AMAZING (Well I thought so at least the honey thought it was the same) but I beg to differ!

The pasta dish sounds so yummy! I'm not too sure about the clams though lol. I'm not big on seafood, expect for crabs. That's about it.
