Today's edition of Watcha Makin Wednesdays is Macaroni Salad!
Who doesn't love them some yummy macaroni salad?! I'm a pretty picky macaroni salad connoisseur though. I don't like it too thick with sauce or to watery, so I have found the BEST recipe to cure my craziness! Which of course I found through AllRecipes.com!
Ingredients
4 cups uncooked elbow macaroni
1 cup mayonnaise
1/4 cup distilled white vinegar
2/3 cup white sugar
2 1/2 tablespoons prepared yellow mustard
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper
1 large onion, chopped
2 stalks celery, chopped
1 green bell pepper, seeded and chopped (I like to use 1/2 red bell pepper and 1/2 green bell pepper)
1/4 cup grated carrot (optional) (I always add these because I love carrots and it gives it more colors)
2 tablespoons chopped pimento peppers (optional) (I leave these out)
Directions
Bring a large pot of lightly salted water to a boil. Add the macaroni, and cook until tender, about 8 minutes. Rinse under cold water and drain.
In a large bowl, mix together the mayonnaise, vinegar, sugar, mustard, salt and pepper.
Then stir in the onion, celery, green pepper, carrot, pimentos and macaroni.
Chopped and ready for mixing
Everything all ready for the pasta to be added in and mixed.
Refrigerate for at least 4 hours before serving, but preferably overnight.
(Most definitely overnight is much better) It gives more time to thicken the sauce.
I have this requested almost always for BBQ's and everyone loves it! This makes ALOT of Macaroni Salad so if I were you and your just making it for like 4 - 6 people I would put the recipe in to a quarter of what it is. You'll have ALOT left over. Even if you half the recipe you'll still have a TON of food.

I've always been a little scared of mac salad. I never knew what was in it, but this sounds delicious. If it's anything like your Rosemary Ranch chicken, I know it's good!
Oooo, I may have to try this....With Gluten Free pasta though!
