I was feeling the urge to use the crock pot last week so I tried out two new recipes. One from Gina’s Skinny Recipes called Crock Pot 3 Bean Turkey Chili but I tried a few different things with it so I won’t show you my chili but I will show you her fabulous recipe. All I actually ended up swapping was the turkey for ground beef because I didn’t have any on hand.
From Gina's Weight Watcher Recipes Servings
Ingredients:
1.3 lb (20 oz) fat free ground turkey breast
1 small onion, chopped
1 (28 oz) can diced tomatoes
1 (16 oz) can tomato sauce
1 (4.5 oz) can chopped chilies, drained
1 (15 oz) can chickpeas, undrained
1 (15.5 oz) can black beans, undrained
1 (15.5 oz) can small red beans, undrained
2 tbsp chili powder
Topping:
1/2 cup chopped red onion
1/2 cup chopped fresh cilantro for topping
Shredded cheddar to top (extra pts)
Directions:
Brown turkey and onion in a medium skillet over medium high heat until cooked through. Drain any fat remaining and transfer to crock pot. Add the beans, chilies, chickpeas tomatoes, tomato sauce and chili powder mixing well. Cook on high 6-8 hours. Garnish with onions, cilantro and cheese and enjoy!
Now along side this recipe I didn’t have my usual Marie Calendars package of Corn Bread Muffin Mix so I went to AllRecipes.com to try out some of theirs.
Ingredients:
1 cup cornmeal
1 cup all-purpose flour
1/3 cup white sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 egg, beaten
1/4 cup canola oil
1 cup milk
Directions:
1. Preheat oven to 400 degrees F. Grease muffin pans and line with paper muffin liners (or not).
2. In a large bowl, mix together cornmeal, flour, sugar, baking powder and salt.
3. Add egg, oil and milk. Then stir gently to combine.
4. Spoon batter into prepared muffin cups. Then bake at 400 degree F for 15 to 20 minutes, or until a toothpick inserted into a muffin comes out clean.
And there they are! They were pretty tasty but I think I will try another recipe that incorporates honey and more sugar as I think they needed to be sweeter. But they were perfect for mixing together with chili!

mmm i love cornbread! so hard to stop eating it though - i made a honey butter once for it and i had to physically remove the plate of bread from my sight!
