Thanks for all your comments last week on my last recipe!
Makes me want to bake and cook even more! So that means.....
This week I tried the most fantastic recipe!
Here's the recipe:
Ingredients:
3/4 cup white sugar
1/3 cup all-purpose flour (can be substituted for 3 tablespoons of cornstarch)
1/4 teaspoon salt
2 cups milk (I used whole milk, the reviews said fat free would be too watery)
3 egg yolks, beaten
2 tablespoons butter
1 1/4 teaspoons vanilla extract
1 (9 inch) pie crust, baked (I cheated and bought the pie crust but it still tasted delicious)
4 bananas, sliced
Directions (I made changes to it because this is how I made it) - In a saucepan, combine the sugar, flour, and salt. Add milk in gradually while stirring gently. Cook over medium heat, stirring constantly, until the mixture is bubbly. Keep stirring and cook for about 2 more minutes, and then remove from the burner.
- Stir a small quantity of the hot mixture into the beaten egg yolks, and immediately add egg yolk mixture to the rest of the hot mixture. Cook for 2 more minutes; remember to keep stirring. Remove the mixture from the stove, and add butter and vanilla. Stir until the whole thing has a smooth consistency.
- Put pudding mixture in refrigerator till chilled/cool. (I put my pot in the fridge with a bucket of cold ice water underneath it to chill it fast because I didn't have alot of time)
- Meanwhile bake your (store bought) or homemade pie crust as directed, then let cool to room temperature. (I put mine in the freezer)
- Once pie crust is cool, slice bananas into the baked pastry shell. Top with cold pudding mixture.
- Chill for at least an hour or more. (I had mine in the fridge for 3 hours and it was perfect! Although I would have liked it to have been overnight)
My cooled store bought pie crust with 3 sliced banana. (I ended up saving the 4th one because I didn't think the pudding would fit with 4 sliced ones and I was right)
Here's my pudding as you can see it's still in the pot, which is sitting in another bowl. Which was the ice cubes and water I soaked it in to chill it FAST.
Here's what it looked like after I poured the pudding on top, then I put it back in the fridge to harden/chill till ready.
It looks funny right? Well what happened was I bought the can whipped cream for a topping ,because I thought it was okay. Wrong.. It still was fine but I topped it with the whipped cream and put it back in the fridge and it melts! Duh.. the label even says serve immediately. Next time I'll use whipping cream as I was told that holds it's shape once whipped.
The pie photo didn't stand a chance.. Within minutes I forgot to take a "pretty" picture of my final product because I wanted to eat it! Then people were asking for seconds! So it was definitely a HIT!

There's a place in Sac that is known for theirs and I kept thinking about it, so I had to try this for the BBQ when I was picked for dessert item. Dustin even loved it and he was skeptical at first because his first love is Cheesecake but I messed up on my last one and my ego hasn't regained it strength to cook another one yet.

Yummy that looks so good! Ive never ate banana cream pie before but that looks delicous maybe I'll try it sometime!!
My favorite dessert pie is Mississippi Mud Pie. Yum!
