Stuffed Green Peppers

I’ve been dying to have some Stuffed Bell Peppers lately and this fit the meal plan this week as I bought a 4lb package of ground beef so I have a lot of new recipes up my sleeve this week and the next few!

Ingredients
  • 4 green bell peppers
  • 1 pound ground beef
  • 1/3 cup chopped onion
  • Salt and pepper to taste
  • Oregano to taste
  • Basil to taste
  • Italian Seasoning to taste
  • 1 (14.5 ounce) can diced tomatoes
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup uncooked rice
  • 1 cup shredded Cheddar cheese
  • 1 (10.75 ounce) can condensed tomato soup

Directions

Bring a large pot of salted water to a boil. Meanwhile cook your 1/2 cup of rice in rice cooker or on stove then set aside. Cut the tops off the peppers, and remove the seeds. Cook peppers in boiling water for 5 minutes; drain. 

In a large skillet, sauté beef until beef is browned. Drain off excess fat, and season with salt and pepper. Add in chopped onions and sauté till tender.

Stir in the rice, tomatoes and Worcestershire sauce. Cover, and simmer for 15 minutes.

 

Season with Oregano, Basil and Italian Seasoning, Salt and Pepper to taste.  Then mix well and simmer.

Preheat the oven to 350 degrees F. (175 degrees C). Stuff each pepper with cheese first on the bottom and then layer the beef and rice mixture until they are topped off and top with more cheese. Then place peppers open side up in a baking dish.  Top them off with the tops of the bell peppers to close them up.

In a medium bowl, combine tomato soup with just enough water to make the soup a gravy consistency.

Pour over the peppers.

Bake covered for 25 to 35 minutes, until heated through and cheese is melted and bubbly.

Then enjoy them! Boyfriend approved!

Yum! I didn't like peppers up until a couple years ago so stuffed peppers always scared me... now I think I need to try them!
