Our St. Patty's Day was pretty mellow, I made corned beef and cabbage minus the cabbage. Last year I made it in the crock pot but it turned out alittle dry for our liking. This year I went ahead and boiled it in water with some beer too. SO much better! And less time too! Highly recommend boiling it, here's the Recipe we used:
Ingredients
- 3 pounds corned beef brisket with spice packet
- 10 small red potatoes
- 5 carrots, peeled and julienned
- 1 large head cabbage, cut into small wedges
Directions
- Place corned beef in large pot or Dutch oven and cover with water. Add the spice packet that came with the corned beef. Cover pot and bring to a boil, then reduce to a simmer. Simmer approximately 50 minutes per pound or until tender.
- Add whole potatoes and carrots, and cook until the vegetables are almost tender. Add cabbage and cook for 15 more minutes. Remove meat and let rest 15 minutes.
- Place vegetables in a bowl and cover. Add as much broth (cooking liquid reserved in the Dutch oven or large pot) as you want. Slice meat across the grain.
Aside from dinner a leprechaun stopped by our mail box and left a surprise for Dustin! Can you guess who that sassy blonde leprachun might be? ME! :)
I usually head home for lunch, amazing luxurious of working close by. So I whipped up a little treat for him to find when he checks the mail. I got the idea from LoveActually's blog post about things to do for your honey on St. Patty's Day. She left her husband green colored candy, or this "pot of gold" which were rolo's. I printed out the text and picture from PowerPoint and then put it onto some scrapbook paper. Filled up a lunch baggie with rolo's and taped it together stuffed it in the mailbox and voila! Little leprechaun delivery!
He loved it, he called after he checked the mail and said it almost scared him because he didn't know what was filling up the whole mailbox.
